The last day of the second week of VeganMoFo found me in the kitchen with some sweet potatoes. I love sweet potatoes almost any way you cook them! Going along with Egyptian theme this month, we decided to bake ours!
During the winter months in Egypt, you can find street vendors with carts selling baked sweet potatoes. They have little smoke stacks and as you walk by, it’s very hard to resist stopping and buying one – or TEN! Although we didn’t smoke ours, we baked them in the oven and then had a perfect snack.
Whether eaten cold, hot, mashed, with a little sugar, with a little non-dairy butter, or with salt, these baked goodies are very versatile and nutritious! High in vitamin A, fiber, complex carbohydrates, and B vitamins, the sweet potato is rich in nutrients.
So, go get yourself some sweet potatoes!
1. Wash and poke some holes in the sweet potato using the tines of a fork, or a knife.
2. In an oven set at gas mark 6 (400 degrees F or 200 degrees C), bake the sweet potatoes on a cookie sheet for an hour.
3. Let cool and eat!
Serving Suggestions and Variations:
- Eat with the skin on!
- Serve warm or cold.
- Skin first, then cut into small pieces.
- Mash and serve.
- Serve with sugar.
- Serve with salt and / or non-dairy butter or oil.
- Add a little cinnamon.
