So, here’s what we had for dinner tonight:
Lentil Loaf (originally from Compassion Over Killing: free)
There are tons of recipes for lentil loaves. We’ve tried lots of them, but we especially like this one. It’s firm but moist and full of warm, winter spices like sage. It does take a while to make, though, so make it on a day when you’re free or prepare some parts of the recipe the day before.
Golden Mushroom Gravy from The Vegan Table, Colleen Patrick-Goudreau (*Available in Kindle version)
This is our go-to recipe for gravy. It’s great with everything from mashed potatoes to lentil loaf to vegan stuffing. It’s not hard at all and is so fantastic it literally disappears from the bowl. Colleen suggests running it through a blender for a smoother gravy, but we like ours with the mushrooms sliced :).
